The sensation of flavor reflects the complex integration of aroma, taste, texture, and chemesthetic (oral and nasal irritation cues) from a food or food component. Flavor is a major determinant of food palatability—the extent to which a food is accepted or rejected—and can profoundly influence diet selection, nutrition, and health. Despite recent progress, gaps in knowledge still remain regarding how taste and flavor cues are detected at the periphery, conveyed by the brainstem to higher cortical levels, and then interpreted as a conscious sensation. Taste signals are also projected to central feeding centers where they can regulate hunger and fullness. Individual differences in sensory perceptions are also well known and can arise from genetic variation, environmental causes, or a variety of metabolic diseases, such as obesity, metabolic syndrome, and cancer. Genetic taste/smell variation could predispose individuals to these same diseases. Recent findings have opened new avenues of inquiry, suggesting that fatty acids and carbohydrates may provide nutrient-specific signals informing the gut and brain of the nature of the ingested nutrients. This Special Issue, Taste, Nutrition, and Health, presents original research communications and comprehensive reviews on topics of broad interest to researchers and educators in sensory science, nutrition, physiology, public health, and health care.

This book draws on the lived experience of sound’s capacity to move and shake us in direct, subtle and profound ways through speech, location sound, and music in documentary film.

The associative, connotative and sheer emotive power of sound has the capacity to move and shake us in a myriad of direct, subtle and often profound ways. The implications of this for its role as speech, location sound, and music in documentary film are far-reaching. The writers in this book draw on the lived experience of sound’s resounding capacity as primary motivation for exploring these implications, united by the overarching theme of how listening is connected with acts of making sense both on its own terms and in conjunction with viewing.

The resulting thirteen essays of Soundings: Documentary Film and the Listening Experience cover films made from WWII to the present day in locations across Europe and the Americas, and in styles ranging from political propaganda, industrial promotion and educative exposition, to more aesthetically-driven films taking their bearings from avant-garde art. The authors draw on their experience in scholarly research, practice-as-research, and in the aesthetic and technical practice of documentary filmmaking. This mix of perspectives aims to widen and deepen the outlook of the recent and growing academic interest in the topic of documentary film sound.

This book draws attention to a part of Erik Werenskiold's (1855-1938) art production from the beginning of the 20th century, his prints made between 1908 and 1938. In our time these prints are not particularly well known despite of a relatively large number. The printed works are overshadowed by his more well known book illustrations and his paintings in a naturalistic manner from the last part of the 19th century. The naturalistic manner maintains in his prints but in these works the compositions are less complex compared to the previous. Several graphic works have features in commen with some of Paul Cézanne's paintings, an artist who greately inspired Werenskiold. As a whole Werenskiold's prints rimind us of some of the cultural aspects in the Norwegian society in the early 1900s. This book places Werenskiold's prints in a national and European context. The oeuvre catalog contains 247 works, 85 intaglios and 162 lithographies. Erik Werenskiold's prints have not previously been presented in their entirety.​

The subject of enteral nutrition is an interesting one both to the healthcare professionals working in this practice area and to the individuals who may benefit from nutritional support. These individuals usually have functional guts but may be suffering from dysphagia (with the underlying neurological deficits) or the effects of radiotherapy treatment. Enteral nutrition involves the provision of nutritional support to individuals whose nutritional requirements cannot be met by a normal diet. In particular, it is the process of delivering enteral feed via feeding tubes such nasogastric feeding, nasojejunal and percutaneous endoscopic gastrostomy tubes. Often, enteral nutrition provision involves the assessment of nutritional status, the determination of nutritional requirements, the establishment of feeding regimes, and the management of patients, pumps, feeds, and feeding tubes.Researchers in this field are also keen to evaluate the effect of enteral feeding protocols, algorithms, and guidelines on patients with different medical conditions in various care settings. There have also been a series of comparisons between the use of feeding tubes, feeding methods, and management approaches. Economic evaluations of enteral nutrition and Home Enteral Nutrition (HEN) teams show the benefits of Home Enteral Tube Feeding (HETF); however, due to the rising cost of HETF, there has been intense debate on the subject. There have been reviews on advances, challenges, and prospects in enteral nutrition.This Special Issue is intended to provide information on recent advances in the area of enteral nutrition.
