BREAKFAST RECIPES KETO BERRY BREAKFAST MUFFINS Serves: 6-8 Prep Time: 10 Minutes Cook Time: 15 Minutes Total Time: 25 Minutes INGREDIENTS - 2 1/2 cups almond flour - 3 eggs - 3/4 cup blueberries or multiberry mix - 1/3 cup coconut oil - 1/2 cup Lakanto Sugar Free Maple Syrup - 1 tsp vanilla extract - 1 1/2 tsp baking powder DIRECTIONS 1. Preheat oven to 350 F 2. In a bowl mix almond flour, baking powder, and a pinch of salt 3. Melt coconut oil and add to the flour mixture, stir in berries 4. Spoon into lined cupcake tins and bake for 20 - 25 minutes 5. Remove and serve with butter and sugar free jellies or jams ALMOND FLOUR KETO PANCAKES Serves: 4 Prep Time: 10 Minutes Cook Time: 10 Minutes Total Time: 20 Minutes INGREDIENTS - ½ cup almond flour - 3 eggs - ½ tsp cinnamon - 1 tablespoon butter - ½ cup cream cheese - Lakanto Sugar Free Syrup DIRECTIONS 1. Place all ingredients in a bowl and mix using a fork or whisk 2. In a frying pan pour about 2 tablespoons of pancake mix per pancake and cook for 2 -3 minutes per side 3. Remove from pan and top with butter and Lakanto Sugar Free Syrup BACON BREAKFAST "SANDWICH" Serves: 1 Prep Time: 5 Minutes Cook Time: 5 Minutes Total Time: 10 Minutes INGREDIENTS - 1/2 cup shredded cheddar cheese for sandwich "bread" - 1 - 3 eggs - 1 - 3 slices of bacon - Optional veggies of your choice - Everything But The Bagel or your choice of seasonings to taste DIRECTIONS 1. In a skillet add shredded cheese and let the cheese melt for our sandwich "bread" over medium heat 2. Once cheese is melty, crack the eggs over the cheese and optional veggies and cook to desired doneness covered with lid 3. Top with bacon, fold over, flip let cook for 30 seconds and flip again and let cook for another 30 seconds to crisp cheese 4. Serve SAUSAGE & EGG PEPPER RINGS Serves: 2 Prep Time: 10 Minutes Cook Time: 10 Minutes Total Time: 20 Minutes INGREDIENTS - 2 bell peppers, cut into rings deep enough to hold 1 egg each - 4 - 6 eggs - 1 lb. breakfast sausage - 3 tablespoons shredded parmesan cheese - butter, coconut or olive oil DIRECTIONS 1. In a skillet brown breakfast sausage and set aside 2. Slice bell peppers of your choice into 4-6 rings and place them in the skillet and saute in oil of choice, flipping once 3. Crack or pour 1 egg into each ring and cook to desired doneness 4. Top eggs with sausage and sprinkle with shredded parmesan cheese 5. Cover with lid and let cheese melt 5. Serve KETO BACON EGG BITES Serves: 2 Prep Time: 10 Minutes Cook Time: 20 Minutes Total Time: 30 Minutes INGREDIENTS - 4 eggs - ½ cup swiss cheese - ½ cup fat cottage cheese - ½ tsp salt - black pepper - 2 slices of sugar free bacon chopped DIRECTIONS 1. Preheat oven to 325 F 2. In a bowl blend cottage cheese, seasonings, cheese, eggs until smooth 3. Oil or spray a muffin tin and pour the mixture into it 4. In a bowl scramble the eggs and place them into the skillet with melted butter and, cook for 2-3 minutes 2. Top the eggs with shredded cheese and bacon 3. Slice avocado and place it over the bacon 4. In a blender place all the ingredients and blend until smooth 2. Add onion, carrot, celery and cook for 2-3 minutes 3. Add chicken broth and simmer for 4-5 minutes 4. Stir in broccoli and cream 5. Sprinkle in cheese and season with salt KETO TACO BELL QUESO SOUP Serves: 8 Prep Time: 10 Minutes Cook Time: 10 Minutes Total Time: 20 Minutes INGREDIENTS - 2 lbs ground beef - 1 onion - 1 cup heavy whipping cream - 1 tsp chili powder - 14 ounces cream cheese - 1 tsp garlic powder - 2 10 ounces cans crushed tomatoes - 16 ounces beef broth DIRECTIONS 1. Saute onion and garlic for a couple of minutes, add ground beef and partially brown 2. Add cream cheese and stir until fully melted 3. Add tomatoes, whipping cream, beef broth, stir and bring to boil 4. Simmer for 35 minutes and serve. KETO SOUTHWESTERN CHICKEN SOUP Serves: 4 Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes INGREDIENTS - 2 larger boneless chicken breasts - 20 ounces diced tomatoes - ½ tsp salt - 1 cup salsa - 6-ounces cream cheese - 1 avocado to garnish - 2 tablespoons taco seasoning - 1 cup chicken broth DIRECTIONS 1. In a slow cooker place all ingredients and cook for 5-6 hours or until chicken is tender 2. Whisk cream cheese into the broth 3. When ready, remove and serve topped with avocado slices KETO POPEYE SPINACH SOUP Serves: 2 Prep Time: 5 Minutes Cook Time: 15 Minutes Total Time: 20 Minutes INGREDIENTS - 4 ounces spinach - 1/2 medium onion chopped - 1/2 cup heavy cream - 1 clove garlic chopped garlic - 1 chicken stock cube - 1.5 cup water or 1.5 cup chicken stock - 1 tablespoons butter - 2 ounces nuts of your choice DIRECTIONS 1. In a saucepan melt the butter and sauté the onion 2. Add garlic, spinach and stock cube and half the water 3. Cook until spinach wilts 4. Pour everything in a NutraBullet or blender and blend, add water or chicken stock 5. Serve topped with black pepper and nuts of your choice for crunch Note: Use chicken stock or chicken stock cube, both are not necessary KETO TOSCANA SOUP Serves: 4 Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes INGREDIENTS - 1 lb. Italian sausage - ½ cup whipping cream - 1 tablespoon chopped garlic - 2 cup kale leaves - 1 16 ounce bag radish - 1 onion - 30-ounces vegetable broth DIRECTIONS 1. Cut radishes into small chunks 2. In a pot add onion and sausage, cook until brown 3. Add radish and vegetable broth and cook on medium heat to slow boil 4. Add heavy whipping cream and kale leaves simmer for 30 minutes 5. Serve KETO BROCCOLI PARMESAN SOUP Serves: 4 Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes INGREDIENTS - 1 large head of broccoli, removed from stalks - 1 tablespoon black pepper - 1 tablespoon butter - 4 tablespoon shredded cheese to garnish soup - 1 large onion - 32 ounces chicken or vegetable stock - 1/2 tsp salt - 1 cup heavy cream DIRECTIONS 1. In a saucepan add butter and onion, saute 2. Stir in pepper, broccoli and cook until soft 3. Combine with heavy cream and place in a blender, pulse to desired consistency 4. Return the soup to the saucepan, season with salt and stir 5. Add soup to bowls, top each bowl with shredded parmesan to garnish 6. Serve KETO CAULIFLOWER SOUP Serves: 4 Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes INGREDIENTS - 1 medium sized head of cauliflower - 1 cup heavy cream - ½ red bell pepper - 1 tsp salt - 1 tsp pepper - 2 tablespoons butter - 2 tablespoons flaked parmesan cheese for garnish - 1 tsp Herbes De Provence DIRECTIONS 1. In a saucepan melt butter, add cauliflower and cook until softened 2. Remove from saucepan and set aside 3. Melt butter and sauté and bell pepper 4. In a food processor add cauliflower mixture, pepper and cook for 4 - 5 minutes 5. Season with salt and pepper 6. Garnish with parmesan and serve KETO BROCCOLI CHEESE SOUP Serves: 2 Prep Time: 10 Minutes Cook Time: 20 Minutes Total Time: 30 Minutes INGREDIENTS - 2 cups broccoli - 3 cups chicken broth - 1 onion - 1 cup heavy cream - 6 oz. cream cheese - 1 tablespoon hot sauce - 3 tablespoons butter - 1 clove garlic - 6 oz. cheddar cheese DIRECTIONS 1. In a saucepan melt butter, add onion, garlic and sauté until soft 2. Pour in heavy cream, chicken broth, stir in broccoli 3. Cover and continue cooking for 12-15 minutes 4. Add cheese and cook until melted 5. Cook bacon to desired doneness and chop 2. Add greens, bacon, chicken, and cherry tomatoes to bowl and toss 3. Mix olive oil, mustard, and vinegar for dressing 4. In a bowl mix all ingredients for the dressing and set aside 2. Preheat oven to 400 F and place chicken breasts in a baking dish and bake for 20 - 25 minutes remove from oven and slice 3. In a bowl place sliced chicken, all the salad ingredients, dressing and mix well 4. Top with shredded parmesan cheese 5. Plate and serve KETO CHICKEN SALAD Serves: 4 Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes INGREDIENTS - 2 ribs celery - ½ tsp pink Himalayan - pepper or other spices to taste - 1 tsp fresh dill - ½ cup pecans - 1 lb. chicken breast - 1 cup mayonnaise or Miracle Whip - 1 tsp mustard DIRECTIONS 1. Preheat oven to 425 F 2. Season and bake chicken breast for 15 - 20 minutes 3. Remove chicken and cut into small pieces 4. In a bowl mix all ingredients and toss until chicken is fully coated 5. Sprinkle with dill and pecans 6. Serve KETO TUNA SALAD Serves: 1 - 2 Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes INGREDIENTS - 1 -2 cans of tuna - ½ tsp dill - 1 - 2 boiled eggs, chopped - 1 slice bacon, chopped - 2 tablespoon mayo or Miracle Whip - 1 tsp mustard - 1 tablespoon chopped onion, optional - 1 bag mixed greens or spinach DIRECTIONS 1. Place egg(s) in water to boil and cook bacon in air fryer or oven to desired doneness 2. In a bowl place tuna, add chopped egg and onion and mix with mustard, mayo, and dill 3. Add a bed of your greens or spinach to a plate 4. Top your greens or spinach with tuna, chopped bacon and serve SPINACH SALAD Serves: 2 Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes INGREDIENTS - 2 cups spinach - 1 medium avocado - 3 - 5 strawberries DRESSING - 2 slices cooked bacon, chopped - 1 tablespoon avocado or olive oil - 2 tablespoons red wine vinegar or apple cider vinegar - pinch red pepper flakes - ½ tsp garlic powder - ½ tsp salt DIRECTIONS 1. Cook bacon to desired doneness in oven or air fryer. 2. In a bowl mix all dressing ingredients 3. In another bowl mix spinach and strawberries and pour dressing over 3. Mix well 4. Plate salad and top with avocado and serve KETO "NOTATO" SALAD Serves: 2 - 4 Prep Time: 10 Minutes Cook Time: 10 Minutes Total Time: 20 Minutes INGREDIENTS - 1 large head cauliflower or 2 small heads of cauliflower - 2 tablespoons yellow or dijon mustard - 1 tsp celery seeds - ½ tsp salt - ½ cup celery, optional - 1 tsp dill - ½ cup sour cream, optional - 3/4 cup mayonnaise or Miracle Whip - 2 stalks green onions - 2 hard boiled eggs - sliced or chopped - 1 tablespoon white vinegar DIRECTIONS 1. Remove greenery and stem from cauliflower and blanch in boiling water for 10 minutes, remove from water and pat dry 2. In a bowl prepare dressing by whisking together sour cream, celery seed, salt, mayonnaise, vinegar and mustard 3. In another bowl mix cauliflower, celery, green onions, hard boiled eggs, add dressing and mix well 4. Serve DINNER RECIPES KETO MONGOLIAN BEEF Serves: 2 Prep Time: 10 Minutes Cook Time: 10 Minutes Total Time: 20 Minutes INGREDIENTS - 1 lb. flat iron steak sliced - 1 ounce olive or coconut oil - 1/2 bag Stir Fry Vegetables frozen - 1 bag frozen steam in bag riced cauliflower LOW CARB MONGOLIAN BEEF MARINADE - ½ cup coconut aminos - 1 tablespoon ginger, chopped - 1 clove garlic, chopped DIRECTIONS 1. Cut the flat iron steak into thin slices 2. Add the beef to a ziplock bag and add coconut aminos, garlic and ginger, marinate for 1 hour 3. Add oil to a wok or large skillet and cook beef on high heat for 2-3 minutes 4. Add frozen stir fry veggies and cook for another 3 - 5 minutes 5. Remove and serve over steamed cauliflower rice
