Roughly chop roasted peanuts, almonds and cashews. Make sure the pieces are chopped properly. They should neither be powdered nor too large. 2. Heat a pot. Add jaggery powder and water. Allow the jaggery to melt completely and let it cook on low flame for 5 minutes. 3. Keep stirring until a thick and glossy texture is obtained. Add all the other ingredients and stir well. 4. Switch off the stove. Add chopped nuts to the same pot. Stir until the nuts are coated with jaggery syrup. 5. Grease a steel plate with a little cold pressed oil. Pour the nut jaggery mixture. Tap the plate and spread it with a spatula to even out the chikki. 6. Make the dividing lines when it’s still warm and let it cool for 15 minutes. 7. Break the pieces and serve. It can be stored in an airtight container for a week. METHOD PREPARATION Prepare almond butter. CELEBRATION DESSERT BEST FOR Celebration A sweet treat KHAJOOR ANJEER DRY FRUIT ROLL TIME : 45 mins MAKES 10 ` INGREDIENTS Sweetener • ¼ cup chopped dry figs • ¼ cup de-seeded dates • 2 tablespoons raisins • 1 tablespoon water Nuts • ¼ cup almonds, roasted • ¼ cup pistachios, roasted • ¼ cup cashews, roasted Other Ingredients • 2 teaspoons poppy seeds, roasted 1. Place all the sweetener ingredients into a small blender jar and blend until well combined and sticky. 2. Place all the roasted nuts into a blender and pulse until broken into small pieces. Do not over blend, otherwise it will convert into a powder. 3. Transfer the blended sweeteners and pulsed nuts into a mixing bowl. Mix well with your hands to form a dough. 4. Roll the dough into a cylindrical shape. Coat with roasted poppy seeds and keep in the refrigerator for 15 minutes. 5. Slice the roll into circles and serve. This can be stored in the refrigerator for a week. METHOD CELEBRATION DESSERT BEST FOR Celebration A sweet treat KESAR PISTA BARFI TIME : 40 mins MAKES 15 ` INGREDIENTS • ¾ cup cashews • ⅓ cup jaggery powder • 1 tablespoon water • pinch of saffron (kesar) • ¼ cup pistachios, roasted and chopped Topping • 1 tablespoon pistachios, roasted and chopped • few strands of saffron 1. Place cashews into a blender and blend until a smooth powder is formed. Don’t over blend otherwise they will convert into butter. 2. Heat a pot. Add jaggery powder and water. Allow the jaggery to melt completely. 3. Add the blended cashews along with saffron and pistachios to the same pot. Roast for 10 minutes on low flame until the mixture turns a little brown in color. Keep stirring and make sure there are no lumps. 4. Switch off the stove and mix well. 5. Pour the mixture on a parchment paper and allow it to form a rectangle with the help of a spatula. 6. Gently press the mixture to get an even shape. Top with pistachios and saffron. Keep in a refrigerator for 2 hours. 7. Cut into desired shapes and serve.
