(2 tbsp) cream cheese 1½ cups (6 oz.) almond flour 2 tsp baking powder 1 egg 1. Preheat the oven to 430°F (220°C) and line a large baking tray with parchment paper. 2. Use your thumb, or the handle of a wooden spoon, to push a hole through the center of each bun and then shape it further until you have bagel shapes. 7. (Optional) : Brush the top of each bagel liberally with a beaten egg and then sprinkle with a topping mixture (everything bagel spice is delicious!) 8. Bake in the oven for 15 minutes. Keto Sandwich Bread 2 cups almond flour 1 ½ cups whey protein isolate ¼ cup melted butter or olive oil 1 tbsp xanthan gum or psyllium husk powder 3 tsp baking powder 1 tsp salt 1. Quick Microwave Keto Bread - Single Serve 1/4 cup Almond Flour 1 tablespoon Coconut Flour 1/4 teaspoon Baking soda or 1/2 teaspoon baking powder 1/2 tablespoon Extra virgin olive oil 1 Egg, beaten 1. In a medium mixing bowl, add almond flour, coconut flour, and baking soda/powder 2. Stir to combine 3. Add in olive oil, 2 tablespoons water, and beaten egg. 4. Whisk the ingredients together to form a bread batter. If it is too dry, add the water 1 tablespoon a time up to 2 tablespoons. The batter is liquid but thick and it should look like a cake batter. 5. Set aside for 10 minutes to let the coconut flour fiber activate with liquid. 6. Spray oil on a microwave-safe pan, (I used a square 6-inch x 6-inch ceramic pan) 7. Spread the batter evenly into the pan. 8. Microwave on high for 90 seconds until the bread is cooked through. Add an extra 30 seconds if needed 9. Remove from the microwave and loosen the sides of the bread using a sharp knife. 10. Place a chopping board or plate on top of your pan. 11. Flip over to release the bread. You may have to shake or 'bang' the pan slightly on its bottom to release the bread from the pan. Otherwise, lift out from the pan with a silicone spatula 12.
