The Distillery now operates 14 stills, nine of which are the famous heritage stills which date back to as early as the 17th century and were moved to Diamond from estates around Guyana. The El Dorado Single Still aged rums are a selection of pure single-distillate Demerara Rums, produced on three of the highly prized heritage stills, then aged in small batches. Now located at Diamond Distillery, this still was originally installed at the Port Mourant Estate, founded in 1732. The El Dorado Single Still Port Mourant Rum is a single distillate from this still. Dating back to 1880 at the Enmore Sugar Estate and now at Diamond Distillery, this is the last fully working continuous still of its kind in the world. The El Dorado Single Still Enmore Rum is a single distillate from this still. Laid down for 12 years in oak barrels,this rum was produced from the original Edward Henry Porter (EHP) Wooden Coffey Still, constructed at the Enmore Estate in 1880. Butterscotch nose blended with roasted coconut and apple. An initial taste of baked peach and coconut with a smoky cedar finish. Excellent mouthfeel. Distilled on the Single Wooden Pot Still, this rum is aged in oak barrels for 12 years. This still is known for producing heavy-bodied, flavourful and deeply aromatic rums: this rum does not disappoint. An initial taste of chocolate with a smooth finish and hints of cigar. The original home of this still was at Plantation Versailles on the West Bank of the Demerara River in the early 1800s. The El Dorado Single Still Versailles Rum is a single distillate from this still, now located at Diamond Distillery. This rum produced from the Port Mourant Double Wooden Pot Still, was laid down in oak barrels for 12 years. Robust flavours with aromas of sweet baked apples mixed with slight vanilla and cinnamon, flambé banana and coconut with hints of peaty aromas.
