Bifanas are a traditional Portuguese sandwich, which is made with thin pork steaks marinated in spiced wine. Due to its simplicity, this dish has many local variants, differing not only in seasoning but also in the process through which they are cooked. Amongst them, the most popular version is from Vendas Novas The marinate, which is called vinha d’alhos , was a result of the Age of Discovery, due to its ability to delay food rot. Later on, herbs and spices were added to the wine and garlic recipe. As the Portuguese reached new corners of the world, so did vinha d’alhos In Goa, more spices were added, and so vindaloo , a characteristic Indo-Portuguese dish, was created. In the 19th century, through the immigrant influx from Azores and Madeira, it reached the United States, where it’s known as pickled pork or vinyoo dalyge .
