Emotion and Its Relationship to Acceptance, Food Choice, and Consumption: The New Perspective

Food is a source of nutrients but it also provides basic pleasure and aesthetic experiences. Acceptance, food choice, and consumption are affected by many factors, including both intrinsic and extrinsic factors and cues, as well as consumer characteristics. Food-elicited emotions are becoming a critical component in designing products that meet consumers’ needs and expectations. Several studies have reported on the presence of emotional responses to food and the relationships of these to product acceptability, preference, and choice. This Special Issue brings together a small range of studies with a diversity of approaches that provide good examples of the complex and multidisciplinary nature of this subject matter.

Art Markets and Digital Histories

This Special Issue of Arts investigates the use of digital methods in the study of art markets and their histories. As historical and contemporary data is rapidly becoming more available, and digital technologies are becoming integral to research in the humanities and social sciences, we sought to bring together contributions that reflect on the different strategies that art market scholars employ to navigate and negotiate digital techniques and resources. The essays in this issue cover a wide range of topics and research questions. Taken together, the essays offer a reflection on what takes to research art markets, which includes addressing difficult topics such as the nature of the research questions and the data available to us, and the conceptual aspects of art markets, in order to define and operationalize variables and to interpret visual and statistical patterns for scholarship. In our view, this discussion is enriched when also taking into account how to use shared or interoperable ontologies and vocabularies to define concepts and relationships that facilitate the use and exchange of linked (open) data for cultural heritage and historical research.

Within the framework of tourism companies and tourist destinations, the question of sustainability is gaining importance. Tourists are increasingly aware of the importance of sustainability criteria, awarding greater value to sustainable destinations. Sustainability refers to a wide range of aspects related to climate change, the economic organization of tourism, social values or questions, job creation, and the necessary protection of the culture of destinations and the environment. Therefore, there is a need for studies that consider these aspects in order to achieve the sustainable development of tourist destinations. Fundamental to this is discovering to what degree tourism companies and destinations approach these questions in the strategies they use to deal with problems stemming from their attempts to be more sustainable. Conceptual papers and empirical research on the economic, social, cultural, and environmental aspects related to tourism companies and destinations are welcome. Studies that analyze how these questions and the concept of sustainability are included in tourism companies and destinations are necessary in these modern times. This book was established for these reasons, dedicated to examining sustainability in tourism. The papers included in this Special Issue can help us to determine the new directions being addressed in the research on sustainability tourism.

They were ideally placed to insinuate the ‘improving’ culture of their employers into the local communities they served, and travelled in droves to far-flung parts of the globe to serve their country. Issues of gender, class and race permeate this book, as the complex relationships between nurses, their medical colleagues, governments and the populations they nursed are examined in detail, using case studies which draw on exciting new sources. Many of the chapters are based on first-hand accounts of nurses and reveal that not all were motivated by patriotic vigour or altruism, but went out in search of adventure. The book will be an essential read for colonial historians, as well as historians of gender and ethnicity.

Aging and Age-Related Disorders From Molecular Mechanisms to Therapies

Aging of unicellular and multicellular eukaryotic organisms is a convoluted biological phenomenon, which is manifested as an age-related functional decline caused by progressive dysregulation of certain cellular and organismal processes. Many chronic diseases are associated with human aging. These aging-associated diseases include cardiovascular diseases, chronic obstructive pulmonary disease, chronic kidney disease, diabetes, osteoarthritis, osteoporosis, sarcopenia, stroke, neurodegenerative diseases (including Parkinson’s, Alzheimer’s, and Huntington’s diseases), and many forms of cancer. Studies in yeast, roundworms, fruit flies, fishes, mice, primates, and humans have provided evidence that the major aspects and basic mechanisms of aging and aging-associated pathology are conserved across phyla. The focus of this International Journal of Molecular Sciences Special Issue is on molecular and cellular mechanisms, diagnostics, and therapies and diseases of aging. Fifteen original research and review articles in this Special Issue provide important insights into how various genetic, dietary, and pharmacological interventions can affect certain longevity-defining cellular and organismal processes to delay aging and postpone the onset of age-related pathologies in evolutionarily diverse organisms. These articles outline the most important unanswered questions and directions for future research in the vibrant and rapidly evolving fields of mechanisms of biological aging, aging-associated diseases, and aging-delaying therapies.

During its 2.5 million years of evolution, the human species has evolved through major dramatic changes, mainly dictated by natural elements and, most importantly, by food availability. The diet of hunters and gatherers, hominids, was mainly based on fruit, vegetables, tubers, and occasionally meat and fish. Then, approximately 10,000 years ago, a drastic change in life style occurred, shifting from nomadic to settlers with domestication of animals and crops. A consequence of this change was the advent of wheat and other grains containing gluten-related proteins in human diet. This revolutionary transformation occurred at the Fertile Crescent, the modern-day Iraq, and spread from South to North and East to West at a speed of approximately 1 km/year. Ever since, the distribution of food goods became more and more uneven with wealthy countries getting more than necessary, while poor countries struggle with malnutrition and consequently this increased mortality. Unfortunately, the industrial revolution, rather than closing the gap, created even more inequalities that still exist today, leading to very different but equally worrisome pathologies, namely obesity in industrialized countries and famine in developing countries.
