WINE OF ORIGIN WESTERN CAPE WINEMAKING PRACTICES: Yeast Strain: VIN7 14°C Fermentation Grapes are destemmed and cooled prior to de-juicing, juice is clarified overnight in settling tanks after which it is racked clean to upright s t a i n l e s s s t e e l f e r m e n t e r s . Fermentation took 4 weeks due to the cold temperature, allowing for an even and controlled ferment. Consistent and hollow waves break on both S and E swells, typically breaking about 100m offshore between several rock jetties. This wine also relies on a synergy of elements; unique Elgin grapes, grown in mineral rich soil, ripened by the African sun & soothed by her breezes.
