WINE OF ORIGIN PAARL WINEMAKING PRACTICES: Natural Yeast 20°C Fermentation Grapes are destemmed and whole berries were pumped into an submerged cap, stainless steel fermenter, with 20% whole bunches added to the ferment. Five days of extended skin maceration before pressing after which the wine was racked to barrel for 18 months of maturation in 225 L French oak barrels (10% New, balance second and third fills). Pull up to Pepper Street on a good day and witness J Bay showing off its glorious geographical fluke, the coming together of a perfect deep south swell and a 10 knot southwesterly wind. This wine also relies on a synergy of elements; unique Stellenbosch grapes, grown in mineral rich soil, ripened by the African sun & soothed by her breezes.
