Zio n “ Makan ” Together Online with Brother Chris Chew Fried Party Prawns Ingredients: Salt, Pepper, egg white (x3), bread crumbs Steps: - Cut the prawns straight: by slit at the top,slit at the 2 sides of the prawn, 3 small horizontal slits at the bottom of the prawn - Marinate the prawns lightly with some salt and pepper - Beat the egg white until soft foam (around 8 - 10 minutes using a wh isk) - Add some salt and corn flour and rice flour into the egg white foam and gently mix - Once done, take the prawns coat it in the egg white and bread crumbs - Deep fry until golden brown Salted Egg Prawn Ingredients: Salt, Sugar, Corn Starch, egg whit e (x1), garlic, some curry leaves, salted egg yolks (5x), a small block of butter (around 50g), chilli padi (2 - 3, chopped) , half cup of milk Steps: - Marinate the prawns with salt, sugar, one egg white and corn starch. - Put some oil into the wok to fry the prawns - Take the prawn s out and set aside - In a separate wok, put in some oil (can use those from frying the prawns) and fry the garlic, chilli padi and salted egg yolks (optional to add in the egg yolk that is left over after adding in the egg white to marinate the prawns) - Put in the curry leaves and fry together until salted egg yolks melted - Put in the butter and fry together - Add in a milk (other options include coconut milk, evaporated milk) - Add the prawns back in and stir fry Writ ten on: 31 July 2020
