Domino’s Clone - Makes 2 Large 16in Pizzas - DOUGH SAUCE Garlic Crust Topping/Pizza Water 473g Tomato Puree 28oz Margarine 1 Stick Mozzarella/ 2.5 cups Sugar 35g Sugar 4tsp Grated Parm 1/3 Cup provolone Yeast 1tsp Vegetable Oil 1tsp Parsley 1/4tsp mix Bread Flour 709g Salt 3/4tsp Garlic Powder 1/4tsp Salt 13g Italian Seasoning 3/4tsp Salt 1/8tsp Sauce 1 cup Garlic powder 6g Black Pepper 1/2tsp Vegetable Oil 32g Garlic Powder 1/4tsp Cayenne 1/4tsp Corn Meal (For Stretching) Directions: Dough: 1. Mix dry ingredients in bowl of stand mixer. 2. Add in wet ingredients and mix on med-low for 5-10 mins or until smooth. 3. Divide dough into two equal balls and let rise in the fridge for 48 hours. Sauce: 1. Mix all ingredients in a small pot. 2. Bring to boil then simmer for 1 hour, stirring occasionally. Garlic Crust Mixture: 1. Melt margarine in a bowl 2. Add in everything except parmesan. 3. Let mixture cool but not solidify. 4. Mix in parmesan before applying to pizza crust. (Apply to crust as soon as it comes out of the oven) Baking: 1. Preheat oven to maximum setting and turn on convection if possible. 2. Coat dough ball in cornmeal, stretch on counter, and place on pizza-screen. 3. Top with 1 cup of sauce, 2.5 cups of cheese + toppings. 4. Bake for approximately 6 mins. 5. Remove from oven, transfer to plate or pizza pan, and apply garlic mixture. 6. Slice and Enjoy!
