In a small bowl, start by mixing some of the milk with the cornflour, then put it aside. Heat the rest of the milk on medium heat, stirring occasionally until it starts boiling. Stir in the cornflour and milk. Do not stop stirring until it thickened. Once well thick, turn off the heat and add a pinch of salt, pepper, and nutmeg. Then add the grated cheese.
