This Link Is Your First Step To Your Evolution Ingredients (5 Servings) 120g Brown onion, finely diced 10g Garlic cloves (approx. 2), minced 100g Carrot, grated 700g Zucchini, sliced lengthways into thin ribbons 2.5g Sea salt (divided: sprinkle for zucchini and remainder for sauce and ricotta mix) 2.5g Olive oil spray (for pan and baking dish) 750g Extra lean beef mince 400g Woolworths Diced Italian Tomatoes 200g La Gina Italian Tomato Passata 2.5g Dried Italian herbs 2g Chilli flakes 2.5g Cracked black pepper (divided: for sauce and ricotta mix) 300g Woolworths Light Ricotta Cheese 200g Bulla Cottage Cheese 100g Eggs (approx. 2 eggs) 40g Woolworths Shredded Parmesan Cheese 80g Woolworths Shredded Mozzarella Cheese Step by step instructions Step 1. Prep the veggies. Finely dice the onion, mince the garlic, grate the carrot, and slice the zucchini into thin ribbons. Step 2. Salt the zucchini. Lay the ribbons on paper towel, sprinkle with salt, and leave for 5 minutes to draw out moisture. Pat dry. Step 3. Cook the base. Heat olive oil in a large non-stick pan. Sauté the onion and garlic for 2–3 minutes until soft. Step 4. Add the meat. Add beef mince and cook for 5–6 minutes, breaking it apart until browned. Step 5. Build the sauce. Stir in grated carrot, diced tomatoes, passata, herbs, chilli flakes, salt and pepper. Simmer for 10– 12 minutes until thickened. Remove from heat. Step 6. Mix the ricotta layer. In a bowl, whisk together ricotta, cottage cheese, eggs, parmesan, salt and pepper until smooth. Step 7. Assemble the lasagna. Preheat oven to 180°C. Spread a thin layer of beef sauce in your baking dish, add zucchini ribbons, then ricotta mixture. Repeat until everything is used. Step 8. Finish + bake. Top with mozzarella and bake for 30–35 minutes until golden and bubbling. Store in the fridge for up to 4 days or freeze for up to 6 weeks. She came to me feeling stuck, exhausted, and unsure where to even begin. 5 months later, she’s 9kg down and has completely rebuilt her confidence - inside and out.
